How to use
D’Eon’s rappie pie potato mix
Use D’Eon’s rappie pie mix to give you a head start by taking care of much of the potato preparation, while still leaving the broth, meat and final assembly in your hands.
That means you can make râpure the way your family likes it, without starting from whole potatoes.
Step 1 — Choose Your Meat or Seafood
Chicken is especially common in our part of Nova Scotia, but pork, beef, rabbit, venison and bar clams are all part of the broader râpure tradition.
Use the protein your family prefers.
Step 2 — Prepare Your Broth
The broth is an important part of both the flavour and texture of the finished pie.
Prepare it the way you normally would, or follow your family recipe if you have one.
Step 3 — Prepare the Potato Mixture
Follow the directions on the D’Eon’s rappie pie mix package to prepare the potato base.
This is where the mix saves you much of the grating and pressing that traditionally made râpure so labour-intensive.
Step 4 — Bring It Together
Combine the potato mixture, broth and meat according to the package directions.
Season to taste and assemble the pie in your baking pan.
Step 5 — Top and Bake
Traditionally, small pieces of lard are placed over the top before baking.
Bake according to the directions on the package until the pie is fully cooked and the top is nicely browned.
Make It Your Own
One of the things we like most about râpure is that there has never been just one family recipe.
Some people like it firmer. Some prefer it softer. The choice of meat, broth, seasoning and even how much broth is used can all change the finished pie.
That’s how – when you use D’Eon’s rappie pie mix – the mix gives you the starting point. The rest can still be yours.
Always follow the quantities, temperatures, cooking times and food-safety directions printed on your D’Eon’s package.
